The soundtrack. Whereas the objective best Pokémon game, HGSS, has full-blown reimagined versions of the GSC soundtrack, with major differences in composition, for the most part ORAS just has boring remasters, and they didn't even remaster the themes for most of the legendaries. That said, the original songs like Zinnia's theme and Wally's theme really do kick ass.

Both the Delta Episode and certain materials in the Magma/Aqua base directly reference Kalos' bizarre 3000 year old cataclysmic war or something. AZ was even brought up mid-story iirc.
In Zinnia's case it's also used as the reasoning for why she coordinates with Magma/Aqua and knowingly lets them attempt to fry/drown the region, because that's apparently less bad than this hypothetical doomsday reenactment that she has in her head.
Incidentally I was going to also mention how every other antagonist in this game acts like a raging psychopath with very minimal prompting or consequence but this description is already awkward enough to type out as it is. And it's more of a consistent gen 6+ pattern than a oras-specific problem anyway.

They're actually solid games. My main gripes is that they did cut corners by removing a functional safari zone, a few dungeons and made some unnecessary casualization like a free legendary handout. Aside from that and BF there's nothing wrong with them and the additions were quite good

HGSS music is a mixed bag
some of them are really good but other tracks are total shit, i dont know why they were so insistent on the stupid smooth jazz vibe across city themes.
ORAS tracks were fine to me, no need to change much when the original is already damn near perfect

Lack of Emerald teams on gym leaders and villains
Talking about villains they weren't buffed accordingly to the buffs given to you as a player
Too much healing and warping done by NPCs
While the Lati@s stuff was nice it was given far too early
Zinnia kinda made everyone else look dumb during the rayquaza scenario

It was honestly very good right until the end, it just needed more Emerald features and the battle frontier to be great
