When you trade League Cards with other people and you update it later, does it also update for them, or do they keep the one they registered?

you keep the one that you got originally.
if you get that person's card again, the new one will have the updated information and the old one will stay the same.

They can still keep the old card even if you update it, I have multiple cards from the same people

That would require some connection that is not trivial.
Not hard either, but it would require some consistent database in Nintendo's server, and GET/POST requests many times during gameplay so you need to think where to put those, so that could be a nuisance. But you could sell that as a feature too.
