Exp share doesn't share EVs.
There's a soft level cap that is based on story progression.
The game likes to jump on you so always heal after every battle.
You can overwrite HMs.
Don't bother with EV training until at least the poison gym. It's much easier to EV train after you get surf (more on that below).
At Rock Tunnel, you can easily farm money. Lead with a fainted pokemon with compound eyes (such as the electric larva), then use a pokemon with thief to steal from wild Chompest. While at it, have a full team of Caracold (ice kitty) with pickup. Also recommend bringing the pickup squad while EV training.
Everything about a pokemon is decided when you receive the egg, except if it's shiny or not. That means you can keep resetting an egg with a pokemon you like until you get a shiny (needs soft reset, save state doesn't work).
At NotCerulean City, you can fish for Fishnism, which has the Synchronize ability (for catching mons with the right nature). You get the old rod directly south of the town, from a fisherman.
EV training spots:
HP (At the graveyard ghost tower, the chansey-like line and the islam oil pokemon give HP)
Atk (In the second town, there's a cave to the left. Fish with a good rod there for Tulure. They give +2 atk)
Def Early (Rock Tunnel, Chompest and the two drill boys give Def)
Def Late (Right below NotFuschia, all pokemon there give Def)
SpAtk Early (At the ufo, Demdow gives sp.atk, and Ayylmao gives SpATK and Speed. Only good if you want speed)
SpAtk Late (Futaba ruins, the unown give 2 sp atk. They're to the direct left of NotCinnabar, or directly below the starting town. Needs surf)
SpDef (In the second town, there's a cave to the left. Fish with a OLD rod there for Troubait. They give +1 sp.def)
Speed (First route, with rats and birds, all give 1 speed)
