It’s pretty obvious you haven’t looked at many SMT designs then, but it’s worth noting that SMT isn’t going for “monster based off of this mythological creature”, but rather the actual mythological creature itself. You’ll find plenty of Kaneko designs with really cool influences particularly from points of inspiration such as high fashion and cultural design, but also a lot of demons are humanoid in nature because, well, that’s what a lot of folklore monsters and demons are as well as monsters.
Here’s a design I particularly like though that might be in the field of what you’re after, though. Hoyau Kamui, Ainu winged serpent god.
