Does professor Sada have a decent role in Scarlet? Or is she just one off and then gone? And does Turo show up in Scarlet?

The actual Sada was the villain, she's so obsessed with the ancient Pokemon that she doesn't care about the fact that they'll fuck up the biological balance of the region
An interesting idea presented in the game is that despite being modeled after Sada, the Sadabot can see that the real Sada's insane and resents what it's created to do. That's why it needed your help shutting down the machine because it's programmed to try and stop anyone or anything that try to.
So the game actually subverted the trope a little. The human is the evil one while the robot is actually the good guy.

She's the final boss of the game with a full team of 570 BST mons. She's a robot and the real professor Sada died years ago in an accident while working on the time travel machine. Sada always had a dream of knowing more about pokemon in the past, and she had created the robot to help her. After her death, AI Sada keeps on existing for so long because of the tera crystals in Area Zero (the huge crater in the map). Area Zero has so many paradox pokemon because of the time machine, but the pokemon are starting to escape from the area and getting outside to the rest of Paldea so she eventually decides to sacrifice herself to stop the time machine so that paradox pokemon don't come into Paldea and destroy it's ecosystem, but later just decides to fuck off into the past forever to live her dream of the meeting ancient pokemon.

I think the reason she just randomly decides to go back to the past is because an executive told the writers that she wasn't allowed to die. I imagine the intended ending was her completely turning to crystal.

This is all a neat idea by Pokemon standards, but now I assume Turo will be from the future, and sent back terminator style to make sure future paradox pokemon come to pass somehow.

That's very reductive.
If we think of the AI in the story as "sentient", then it becomes a quite human story of struggling to rise against your programming and conditioning to do the right thing, even if your brain tells you not to and it will result in your total annihilation.

Both could fit as Turo being a robot works better with his whole look. But fucking off to the past where she is stuck make more sense, than going to live in the future where presumably they could also make this machine and send him back. Also a bit more sad as the implication is she might just stop working there as the body was breaking. I'm not sure if a robot invasion works better or not. I kinda like the invasive species angle more and it sort of makes more sense thinking they could live together. Rather than oh no these robots are asshole who'd thought.

Some rumors say that it's not actually time travel and the real power of the crystals is the ability to physically manifest dreams and imagination. The professors just got the ancient/futuristic Pokemon they dreamed of and mistook it as time travel. This supposedly ties to a third legendary and will be the plot of the DLC.

It was actually pretty good. The descent to find her, unravelling mystery, cool fight and sad goodbye were all handled pretty well. The last story actually made up for the others being pretty lame.
