Egg Moves are still transferable through breeding, Centro is a dumb fucker. The Mirror Herb mechanic is to get Egg Moves which the Pokemon can't currently get through any parent from the same egg group.

Have Pokemon in party with move (let's say, dog with Last Rites). Have Basculegion in party, holding Mirror Herb and an empty moveslot. Genders don't matter. Egg groups don't matter. Start a picnic, walk around for a minute, check Basculegion's moves. It now has Last Rites.

You can only transfer moves this way if the recipient has that move in their Egg Moves list.

Yeah with this mechanic back + easily accessible mints and bottle caps, ability capsules and patches, all that is left is a nice consistent way of resetting EVs to 0 and literally any Pokemon can be optimized no matter what. Except Trick Room friends who want 0 Speed IVs, those are fucked.

Caps and Capsules can be bought at shops in the post game (20k and 100k pokedollars, respectively). Patches are drops from Six Star Raids, unsure how rare, but definitely obtainable. Those raids are hard to solo though, which won't be a problem when the game actually releases.

No, it's actually better. In SwSh, you had to have two pokemon of the same species in thr daycare to transfer egg moves. This gen, it seems like they don't even have to be the same species at all.

Kinda, I don't think a good money-farming strategy has been found yet. The post-game School tournament doesn't yield as much as previous games' E4 rematches so we'll see.

EVs still relatively unexplored. Someone on Smogon was offered a bunch of the EV-removing berries, but besides that, I have not been able to find them. No jobs either but I need to try talking to every NPC and have barely done any school-related stuff.

It was an inevitable change.
The pokedex culling meant that every new game they'd have to recheck the egg move list to make sure they didn't accidentally make intended egg moves unavailable because a parent Pokemon is missing from the game.
Even before the dex cut there had been cases where a Pokemon had Egg Moves they couldn't obtain because nothing in their egg group could learn it, like Head Smash Nosepass in gen 4.

With the buff to power items in SWSH it barely takes any time to do anymore. They give 8 evs per ko (16 with pokerus) not even factoring in what the pokemon you beat gives. And that’s assuming you don’t just pump them full of vitamins
