I want to go over outbreaks as a shunting method in this thread, as I've caught 3 shinies with this method.

Outbreaks are a large group of a specific pokemon. When you defeat some, more spawn, and they continue for a WHILE. I've gotten outbreaks of 100+ pokemon, but the size seems to vary.
>How do Outbreaks spawn?
Outbreaks rely on real world time, unlike the in game day-night system. If you are using a homebrew Switch, I recommend Tesla Overlay + Luxray Time Skipper to get infinite outbreaks with no penalty.
>What are the rates for Outbreaks?
The odds feel slightly higher than 4096, but it could be because many pokemon spawn at once. About 1/10 Outbreaks resulted in a shiny, but I don't know how much luck factored into this.
>What to do in an Outbreak?
Just spam right bumper to have your pokemon attack and one-shot all of the spawns. Your pokemon will NOT kill a shiny, so subtle shinies are safe. When an Outbreak starts to die down, the top right corner will notify you. Once it says "The pokemon have dispersed," the Outbreak is over.
