I don't think it matters too much since trading is easier and more widely available than ever, plus you can use the co-op functions to encounter version exclusives from the opposite game. It just depends on which ride mon, uniform and professor you prefer.
But if you just want to start a war, then Violet. Koraidon a shit

The most importan think to decide must be what would be scarlet or violet exclusive in the DLC. As we have seen, there is a paradox pokemon for each. And I doubt that there will be multiple paradox Suicuine or Verizon, just one. So, although for me I would like to ride Miraidon, I will go for Scarlet, since it will have Suicuine trio paradox shenanigans, hoping that it will be VGC viable

This. Having a few exclusives isn't really worth arguing over when you can just trade with randos online to fill out the dex. The only real difference is whether you ride around on a red meaty dragon or purple metal dragon. I'm picking Violet because purple is the best color.
