It wasn't just people not liking Skyward Sword, it was the fact people felt Nintendo games in general were getting too samey. Everyone jerks off the Wii U now but at the time the consensus was you barely had a reason to own one if you had a 3DS barring Splatoon and maybe Smash. Everyone knew a new Zelda was coming so people were desperately hoping for something new, which is what they got. Even you think it's just another "ubisoft game" you should atleast appreciate why the anticipation and delivery lead to BOTW's reception, which even as someone who loves the game is admittedly overblown
That being said Pokemon was in a similar boat of desperately needing something new and different. Considering we had 3 generations in a row of 3D pokemon games not really living up to to their massive potential and SWSH being nowhere near that high bar I think it was pretty expected we ended up with something different like SV and it was more complicated than "copy popular game"
