The problem with Legendaries imo was that they were shown way too sparsely. But now you actually have time to bond and enjoy them slowly getting powered up. But from what I have seen, you can't have them on your team and ride them at the same time, can you?

What's your issue with the weather trio? I thought that was done pretty well - big ancient monsters that are awakened by people who don't understand the consequences of their actions.
I also think Ho-oh and the Dogs are pretty good too. And Mewtwo honestly. There are a lot that work for me

like again, the weather trio (kyogre primarily) are my favorite pokemon ever made but the story's not really deep

Good and Deep are not synonymous. You don't need one to be the other.
Their story was effective, has a message, and was well told. And "other gens do something similar" doesn't really factor it. 1 because they should be judged independently, and even if you reject that, 2 they were the first ones who did it
