I do fight all the trainers (If there's rematches, I don't do those outside of Gym Leaders and shit).
No items in battle and Set Mode, obviously.
As an example, this leads to you being about 10 levels below the SM E4, and depending on your team composition, this can force you to think carefully about what to do for the fights.
That said, SM were balanced around using the Exp. Share, while XY was not, so it's entirely possible you just end up at appropriate levels instead.
