It's literally explained in-game that they're named after creatures in an old book (the Scarlet/Violet books) and a paranormal magazine because they have similar characteristics to said creatures.

The word mammoth is derived from a very old Siberian word meaning "earth horn" because they only saw tusks and didn't know what the rest of the animal looked like, so no shit they ddin't name it after an elephant, another animal they likely didn't have any knowledge of.

You are wrong, as far as I know. Bees and ants both evolved from wasps, with bees evolving from Vespids or something similar and ants evolving from parasitoid wasps

I've been trying to work "Jiggantopithecus" into Scream Tail's nickname, but it's just too many letters.
Not sure how the futuremons would work into that. Maybe something outer-spacey, like semi-Latin constellation-sounding names?

To be fair, it's a lot less jarring when the names are agglutinative. Names like Greattusk, Irontreads, Screamtail, Sandyshocks and Fluttermane are basically the equivalent of names like Talonflame, Voltorb, Scatterbug, Blipbug or Sandslash.

At least with Ultra Beasts they have actual names like Nihilego and Buzzwole on top of having placeholders such as UB-01Symbiote and UB-02 Expansion
Paradox names are just borderline placeholder names that got stuck with it even in prerelease
