I'm actually liking SV quite a bit and I hear the story gets pretty good

But I never wanted Pokemon to go open world and trading highly designed routes and towns for generic open world space was a big reason I didn't want open world

Sw/Sh had too many straight line routes but it was a very scenic game.

Towns have been shit for fuckin eons. There were like 4 towns worth a damn in gen 3 and then after that they were all pretty much purely decorative trash. There's nothing stopping them from making towns more interesting in open world except lack of ambition.

I phrased it wrong. What I'm trying to describe is more noticeable in Sw/Sh and SuMo. But routes, rather than an open field, have more design to them than open world space does

this is something that's been bugging me too, a lot of the areas feel like barren wastelands. considering they added a photo app, there should be some interesting landmarks every now and then
the towns also bug me, the houses I tried going into were basically just props and the shops are just menus now... it feels less immersive this way.
