Why do some pokemon have crushes on trainers in the anime? I feel like it would be really weird if Game Freak went further down the rabbit hole with this concept.

The anime has a lot of weird things, most for the purpose of joke. Even Game Freak doesn't approve many things anime, like barely accepting Jessie and James to appear on Yellow / LGPE but not accepting a talking Meowth.
