Counterpoint because they can re-use and update models instead of needing to redraw sprites it should be even easier to get all the Pokemon in one game. For what reason were any of the mons available in SwSh dexcut? Last time was the excuse that they'd have to remake all new models (even though they didn't) but now those models exist and just aren't being used?

Updating models takes development time, arguably more time than drawing a sprite. Their excuse for swsh was bullshit, but we clearly see in PLA and SV they're giving each pokemon new textures, models and animations. There's also the issue of regions feeling too bloated or the meta not feeling fresh. Overall it's just a bad decision to upkeep 1000~???? mons until the end of time instead of doing a batch of 400~500 per game

There will be new mons to use. Besides as long as they don't cut every waifumon at once I don't care. You can't transfer from home for the first few months so there's no difference between it not being coded into the game vs not obtainable. From that perspective it's not so different. That being said, Pokemon makes so much money and they pump out shit games anyways, with that much money they should include 2000 mons with unique animations for every move. Fuck those cheap bastards.
