in the entire history of mainline pokemon games, there have been probably less than 5 npc trainers outside of the battle tower who will switch their pokemon out without them fainting first

They removed it from the options menu but the functionality for Set Mode still exists in the game. When you only have 1 party member the game doesn't ask you to switch.

Raid battles give XP and money though. If you do the right 5 star you can get about 60,000 XP from candies plus maybe something like a Rare candy on top of it.

Being able to switch whenever is. It requires foresight, understanding of the opponent's movepool, prediction and long term planning.
Being locked onto the same mon just encourages slapping a choice item on the strongest thing available and attempting a turn 1 sweep.
