They seem to be doing the whole humanity imitates nature bit. They did it with Klink in SWSH after retconning the dialouge that implied klink showed up shortly after the invention of gears. Hisuan Voltorb being around before the invention of Pokeballs hints at this too.

Hisuan Voltorb makes sense because of Pokeballs being made from Apricorns, so it feels weird if Foongus didn't originally live near trees as a mimic of Apricorns that fell off the tree.
