Why does Iris title get acknowledged more way than Ash winning the Alola league despite him being more experienced and he won a league first yet her title is brought up every single time? Doesn’t make any sense

Her title gets acknowledge because she's a champion in mainline games too, while Ash does not exist in them (unless you count Red which you shouldn't since Masters showed they are two separate characters).

If we based Kukui's level purely on the games, he beat Lorelei, Bruno and Agatha, and might even have beaten Lance(Kukui leaves the actual result of his fight against Lance up in the air) when he was younger and possibly weaker. He's Champion tier there.
This might of course not translate in the anime.
