Heath observed another Koraidon/Miraidon on his expedition, the Pokédex and the research notes tell you a "Winged King" or "Iron Serpent" were described in the Scarlet/Violet book. It probably wasn't one of the ones the professor captured.
I don't think there's any reason to believe the Scarlet/Violet Book isn't accurate. Heath describes thing you can find for youself in the crater, like the mysterious plate that they excavated and they describe as "beyond modern science." His experiences parallel what happens to the professor, like him blacking out and waking up with a page of new notes and information that he had written, similar to the professor miraculously developing an advanced AI.

The time machine can't have been the only connection to the past/future within the crater, because we know the Paradox Pokémon already existed there 200 years ago. Heath's team saw visions of past/future Pokémon that clearly resemble existing ones. Another civilization existed there, leaving behind the huge ritual circle in the cave and the indestructible metal plate with unknown writing. Heath and Sada/Turo were possessed with knowledge of the crystals that they didn't fully understand and should have been beyond them.
