They only cut so they don't have to make new models. Stuff that already has a model is here to stay until a new style comes around, which will probably take a while since that requires effort.

It's not just about the models, it's unironically also about the overworld and other non-battle animations.
Lots of mon get swimming anims, kicking anims for the picnics and who knows what else.
Lots of hisui mon aren't brought over despite all being modeled the same as this game.
