I think it's made pretty clear with "Winter mountains are dangerous. They can throw your life right off course, easy as that" that it's a pretty simple case of he was snowboarding, something went wrong (Pokémon related or otherwise, doesn't really matter), he got fucked up in some way and had to give it up, only being left with running the Glaseado Gym.
They're not much by general RPG standards, but by Pokémon standards I really enjoy how most characters in ScaVio have at the very least something to look into beyond "I'm a trainer and you have to fight me". It's nice
