Should I keep The Ur-Dragon as my dragon tribal commander or should I change it to Tiamat to have more likely access to Morophon so I can spit out some WUBRG dragons quicker?

Tiamat is certainly the stronger commander, having a tutor in the command zone is certified value. The downside is that a lot of your games are going to feel the same since you just ramp to Tiamat and go get the same combo pieces. Depending on the powerlevel of your table you might have more fun playing Ur-Dragon since it has higher variability. Tiamat should still be in your 99 though.
