And here's mine. Instead of a gym challenge, the leader just asks you to go restart an old windmill because it's too hot to fight, you run into other other trainers who are trying to fix start the windmill to get a crack at the gym leader, but they aren't able to figure it out and challenge you out of frustration.

Water gym leader with an aquarium themed gym which would be like a top down maze with the underwater tunnel like areas and to find the right path you need to look at the surroundings.

As for pokemon while it is a water type gym there's another restriction where all the pokemon used by the gym trainers and the gym leader are ocean pokemon and no mammals so only fish, mollusc, ocean invertebrate and crustacean pokemon, for example Bruxish, Mantine, Tentacruel, Quilfish, Octillery, Kingler, Alomomola etc, as for the gym leader:
Gastrodon
Jellicent
Barbaracle
Clawitzer
Kingdra
and if we're including Terastallization then Tera water Grapploct

I like ghost types the most.

For my gym challenge, you need to reach the end of a haunted woods to get to the leader without being caught by the wild ghost pokemon there. Getting caught once or twice would set your progress back a bit. Getting caught a third time fails the challenge.

Date rape themed gym challenge. The place would be decorated as a hanging garden type high end bar and the gym trainers would all approach the challenger by trying to get them distracted with small talk and then trowing pokemon with sleep inducing moves at them by surprise.
If the challenger wins they get a badge and the best move in the game, if they lose they get passed around until they wake up.

Flying gym leader located at a city with an Aviation museum. Gym test is to find 4 Bagon hidden throughout the museum with the gym trainers providing hints to their locations while also explaining the lore behind Bagon and flight. Gym Leader is a retired pilot who wants others to have the dream of reaching the skies like he did.
Signature pokemon ranges by badge level being a Flying tera type Bagon in the earlier gym levels while if he is the 8th gym its a Flying tera Salamence.
His final team would be

Some sort've abandoned Hospital or Sewer System, with a gigantic flatscreen monitor.
