Thematically interesting options:
-Greece; lots of classical Western mythologies to explore, cohesive and easy to draw inspiration from. Also unlikely imo.
-China; Not happening given relations, but would be interesting with a good mythos and culturally expansive range of lore to explore.
Aesthetically interesting options:
-China; see above, but would be pretty awesome to see the vast array of landscapes China has be explored in a region.
-California/PNW; Possible? I personally think the various microclimates would make for an interesting area to create a region out of (lakes, rivers, beaches, cities, small towns, vineyards, deserts, mountains and snow). Though not as interesting as many options, it could expand to include general PNW area like Alaska. Native-inspired lore and design, but probably not a good move.
Likely Options:
-Germany/Switzerland: Lots of options to go with this, good aesthetics if they do the towns properly, thick forests, lakes, rivers, mountains. Could be ok if directed well.
-Italy: I'm less certain on this possibility, but many others agree it would be feasible/easy to do given their other choices for regions.
-New Zealand; I think NZ would be a great option. Two islands, lots of varying landscapes, Tasmania DLC option. It would have a lot to explore and fit in thematically and visually.
