Most randomizers allow you to fine tune exactly how fucked the randomization is.
In general taking legendaries out of the pool or trying to randomize for similar BSTs gets good results when trying to have a good time playing them.
If you are watching randomizers on youtube though you'd be better off finding races. Raw single player randos are as you said often just people playing poorly for an audience.

The appeal is that it's random. It's also something people usually do after having already played the game normally, possibly multiple times, so I don't know why you would expect them to be invested in the story.

I like randomizing with global settings, no legendaries allowed. Force evolve on trainers at X level and set their levels to be 20-30% higher than normal.

You get the same amount of pokemon variety of the base game more or less, and trainers are actually tough most of the time. Randomization isn't fun unless its hand and hand with Restriction.

Bruh, randomizers are about trying to squeeze the last few drops of blood from the stone, at that point you can already recite every bit of text in the game and so have no reason to sit through the cutscenes again.
