Konnichiwa!

Last night we enjoyed Larry-sans balls together
But that was just a simple experiment

Today we take what we have learned and will give them a bit more care and attention

On our previous episode we made use of our leftover bento rice, but today we've made fresh rice

We will add some of our special sauce directly to the rice as well as some of my favorite furikake and fold it all together

This will ensure even seasoning throughout

The joyful thing about onigiri is you can make it however you want to fit your tastes
In the case of yakionigiri like we are making today they are traditionally just rice with no filling, so we will make one unfilled as well

Previously commenters mentioned they would like to see a hand shaped onigiri instead of a molded one
So if you bring your attention the onigiri on the right you can notice the difference in shape

We are using a small amount of sesame oil in the pan as the rice is sticky, we dont want have an accident and break apart during cooking

OP you should make a larger handmade one. If you didnt try already, use plasticwrap with a little cooking oil to form them.

Now that the rice has had a head start we can begin the glazing process

Larry-San like his balls extra crispy so we have to be careful when adding the glaze
The special sauce contains sugar which will burn quickly and must be watched closely
It's best added later during cooking

And now they have been grilled to an extra crispy bite, just starting to turn black

We learned last night that a small amount of black color imparts a crunchy texture without a burnt flavor

Because we added some secret sauce to the rice before hand the shapes were much more firm during cooking, I reccomend you do this if you are a beginner at this technique like me because the balls are more forgiving to work with

The balls are warm and sticky with a satisfying sweet and salty aroma

Once again Larry-San was correct about the squeeze of lemon
It creates a balanced harmony of flavors
The citrus went well with both the filled and unfilled balls

In fact after tasting with the lemon I even added more

Thank you for your question
For special sauce

¼ cup onions sauce
¼ cup mirin
1½ Tbsp sake (sherry can be used as a replacement)
2½ Tbsp sugar

Whisk together and bring the mixture to a boil then reduce the heat and simmer for 10 minutes
Then you can carefully transfer it to a bottle. I suggest glass because you will need to transfer while still warm because it will thicken and become extra sticky as it cools
