What are some more challenging ways of playing Pokémon that doesn't involve nuzlocke or romhacks? I thought of using only Pokémon bellow 400 base stats.

Only Pokemon with Self-Destruct. Mons can only use each move once, so the 4th move will always be Self Destruct.

I'm doing a Pikachu-only run in LG, only having a 2nd Pokemon in my party to act as a bike. It's more difficult than it sounds like it would be.

Generally, people doing self-imposed challenges place restrictions on grinding like "Can't ever exceed the next gym leader's highest level".

pokemon is never challenging because it's turn based. No matter what restriction you place, it's either a dice roll or guaranteed success. The only "challenge" is figuring out the 'win path'.
