For one, it doesn't waste nearly as much of your time. It skips the usual minutia of teaching the player how to play Pokemon, and expects that you already do. Instead of playing as another newcomer and being taught how to play the game, Wes has his own starters in the late 20s and you jump right into the game's conflict. Our guy has gone rogue from his old gang, and we're effectively on the run. Meanwhile, the first several hours of Gen 7 are just the same old stuff, like showing you how to jump down ledges, fighting your rival, going to school...It isn't only slow and linear, it's uneventful and safe.
The Totem bosses are unique, but Colosseum features doubles everywhere. And the limited roster of shitters from Gen 2 naturally puts you at a disadvantage for team building.
And features being removed doesn't really matter because this was a spin-off game. It was beyond expectation for the game to even have an RPG mode when it could've JUST been Stadium 3 with nothing else. Gen 7 was a mainline game celebrating 20 years, so it was unfortunate for core mechanics like the PSS, DexNav, Triple Battles, etc. to be missing.
