For the palezoic a lungfish that becomes an amphibian and the final stage in a synapsid (Dimetrodon) or a diapsid (Thecodont) depending on some game mechanic.
For the Cenozoic I would prefer more ancient evolutions, where we reactivate a gene from a modern pokemon and it takes the form of its ancestors like Pilloswine and Yanma. In this case a pokemon bird (Like Paldea's parrot) become Terror birds, a feline become a saber tooth, and a lizard become a megalania, a tapir become a chalicotherium.
