It's purely conjecture, but the types psychic was originally supposed to be weak against were ghost and bug (due to a glitch psychic in gen 1 was actually immune to ghost). Ghosts are spooky and a lot of people find bugs creepy, so I think the idea was that since psychic-types rely on their mental abilities in battle the best way to fight them would be to unnerve them and throw them mentally off-balance.
One might think dark-type would also fit the same logic, since fear of the dark is a common fear, except the original Japanese name for the type has nothing to do with darkness. It literally translates to evil type, which is why dark attacks tend to be themed around underhanded tactics like stealing the opponent's held item or hitting them when their guard is down. Since such tactics tend to rely on catching the opponent off-guard you'd think they'd be less effective against psychic-types that can often read minds, but I suppose they needed to give psychic another weakness.

The thing that bothers me more is why dark is immune to psychic and fairy to dragon. The gen 1 immunities mostly make intuitive sense: electric attacks can't effect ground-types because they're literally grounded, flying-types don't care about the opponent causing an earthquake because they're flying above the ground, and ghosts can turn incorporeal so normal punches and kicks pass right through them (logically this should make them immune to other physical attacks as well, but letting them ignore half the type chart would've been way too strong). Only normal being immune to ghost doesn't make much sense. Steel being immune to poison also makes sense since you can't poison metal (though I think resisting poison and being immune to the poison status would've made more sense, since I can see attacks like acid still damaging steel), but I can't think a good explanation (aside from game balance) why dark and fairy are completely immune to psych and dragon instead of just resisting them.

Yes default, but humans can be psychic (such as Sabrina), or part Fighting (such as Bruno), or part Water (Like a firefighter, ba dum ts).

But really Psychic is based on the Mind, which has irrational fears. Fear of the Dark, Fear of Bugs, Fear of Ghosts. Sure you can argue it should be scared of Fire, Water, Electric, etc. But balance.

I view the fighting-psychic-dark triangle as a play on a part of the Hero’s Journey. In the beginning, the hero (fighting) is consistently unable to beat his master (psychic) but may grow more capable as he develops his skill, hence the resistance. However, the villain (dark) will always kill the master, which is why dark is completely immune to psychic. The hero, at the end of his journey, will challenge the villain to culminate his character arc, though not without struggle, hence the resistance.

As for Dark, bugs are usually habituated in complete darkness especially the bugs that are most seen in homes.

As for Steel/Poison, Steel should actually be weak to Poison, not all Steel Pokemon are made of Steel, some are made out of Iron, and like you said, certain things can take acid and different types of shit and corrode.

Also the theory of phobias seems acceptable to me, just imagine there are mental illnesses that destroy an ordinary person and affect them on a physical level, what will a mental illness be like in a brain as powerful as that of an Esper?

They should retcon the entire type chart. Every type should have only one weakness, and one strength. That's it. You'd balance the games a lot better too, because then you can go back and start fixing stat distribution way easier, on top of abilities, moves, etc.

Insects aren't seen as creepy and spooky in Japan at all, except for just cockroaches. They're seen as cool and/or cute and almost every single bug Pokemon reflects that, not to mention Tajiri himself adores bugs and didn't want them represented as gross.

Bugs are stereotyped as martial artists and heroes thanks to Kamen Rider, Metal Heroes, Japan's love of Spider-man, the beetle wrestling hobby and loads of other reasons. Bug is strong to dark and neutral to fighting because Bug and Fighting are both "heroic fighters" and Dark is a heel fighter.

It was mostly just in a good time to do that stuff. Video games were slowly becoming more popular, and it was a good marketing substitute with "Gotta catch'em all" and being accessible in terms of just cute but cool.

I imagine if Digimon had managed to come out first, the roles would be switched. Hell if Yokai had come out back then around the world, it'd be top dog.
