What makes a fighting type any different than a human that does martial arts? Aren’t their moves the exact same? (Submission, low kick, karate chop, etc.)

Also each Fighting type species is uniquely suited for the fighting style their modeled after. While humans would be considered generalists. While human Karate masters may exist they will never reach the level of a peak Sawk.
