I also think its not really an actual problem unless you only ever did challenge runs which is such a small part of the fan base to appeal to. Normally you do challenge runs on a game you like and are familiar with to spice up a 2nd playthrough, so you know how to enforce the rules.

Again, go and catch some level 30 Pokemon and try to fight the AI professor with them, or hell just never fight anyone other than bosses.
Mario/Zelda also have become incredibly streamlined and much more forgiving, ALBW and BotW are two of the easiest Zelda games and Odyssey has some of the most broken movement options of any Mario game on top of 3D World being one of the easiest games in the series, so not sure what your point is either. If you want challenge I'm sure you can find a used copy of Elden Ring or Wo Long like the rest of us
