As pokemon works right now there's a major opportunity cost for each move you select. With more slots there'd be no reason to not just have coverage for everything as well as whatever set up moves you wanted.
From a single player perspective it wouldn't matter since the games are already easy, but pvp would collapse as checks and counters would no longer exist.

If pokemon were to somehow turn into a action RPG with the attacks having different ways to work, Areas, ranged, close combat teleporting you to the oponent if you are close enough, sure yes, more moves are fine.

Yes. 5 or 6 moves would be find along with a third typing to spice things up. GF is just too scared of doing anything fresh and original, so they've decided to just poorly copy the open world formula and keep making shittier mega evolution alternatives for every gen and stick with that.

I think there should be "5th" move slot that is purely reserved for field moves.

You can't use it in battle, but it's there for the sake of saving the space while making your Pokemon useable outside battle.

No. The more moves a Pokemon can have the more defensive the gameplay becomes. Even just 5 moves would lead to constant switching. (Though they could potentially fix this by making switching out cost PP).
People are already struggling to make this children's game competitive.
