-dynamax raids are pretty much just solved content - get your pokemon of choice and spam its strongest super effective move and hit the boss until it dies and drops loot, and maybe you can catch the boss if you have a pokeball to waste
-navigating the PVP battle custom rules list is a pain because of the tiny scrollbox for clauses, which sorts by alphabetical order, and there's a lot of them, so enjoy sifting through very situational stuff just to find the clauses that you'll actually use
-speaking of PVP, most people on public servers will just spam legendaries and pseudo legendaries, sometimes even without EV training, so it's not that engaging as other pokemon PVP experiences.
maybe that one is just because minecraft's target audience is young.
-transparent parts of models don't render correctly. try looking at shit like carbink or diancie
-oh and since I mentioned ridiculous self sufficiency without needing to make a (permanent) base, several usably common wild spawns (larvitars and carbinks, in mountains) drop gems that can be used to make tools that are better than iron
-making pokeballs is a slog, though. this was changed in 1.16 based versions but I haven't bothered wasting time to check, but in 1.12 based versions, good luck without building automatic hammers (which need slimeballs, and mons that drop those are rare) or spending 5 diamonds on a hammer.
honestly, if you want to build things, just play on vanilla servers since pixelmon barely adds anything building wise
and if you want to battle other players, just go on pokemon showdown, you'll get slightly better fights there.
unless you're on a private server where you'll actually get to interact with people ingame outside of the GTS and global chat
