I imagine Gholdengo's stomach acid to have the ability to turn food into liquid gold that gets absorbed by the stomach walls and used to nourish its body. There's no Philosopher's Stone inside, just Gholdengo using its natural powers which means you can't farm the acid for infinite gold glitch as it won't work outside Gholdengo's body.
