I realized the "decline" of Pokemon designs since gen 6 was made to pander to girls.
Girls are a major Pokemon consumer demographic, when you see stuff like Gyarados, or Nidoking, or Blastoise... you don't see these as designs that girls would like.
Ever since gen 6 and the introduction of the Fairy type (a type that blatantly panders to girls) Pokemon designs have become less rough and more round, with more exaggerated proportions instead of more feral survivalist animalistic traits. Ash's design as well was changed to reflect these changes.
I realized this watching the new episode with the female MC and how all of these Pokemon are softer, rounder and friendler looking, nothing comparable to the 1st episode Spearows potentially capable of plucking a kid to death.
