I get what you're saying about sunkern's colors, but the shade of brown used is not always that dark, in official art and in-game it's a lot easier to see so it's fine. Not like I think about sunkern a whole lot on my daily life.
As for lanturn, it's good, just not great like chinchou. It loses the unique eye design which is a legit criticism, and its name is just not as cute as "chinchou", but it not being "scary" like a real anglerfish is not the pokemon's fault, just up to personal taste. Considering what other fish pokemon end up looking like when they're supposed to be "scary" (gyarados, sharpedo, school wishiwashi, basculin, huntail arguably), and that they just look goody to me (in a good way) rather than scary in any way, I'm perfectly fine with lanturn being cute. Also despite the feeler which is an anglerfish feature, lanturn might be mostly based on the barreleye fish, which is why its eyes and face look "more human/anime" than chinchou's. Its overall color distribution also matches the barreleye almost to a t, if you replace blue with pitch black.
For context, the gen 2 pokemon I like the least are skiploom and hitmontop (and the later only specifically because of its association with the hitmon line, the monster itself looks cool).
