I always figured they just assume position when there's a challenger. And you always see them like that because you are the challenger.
As for Red, I guess he's supposed to be like one of those autistic martial artists that train in isolation to find themselves or whatever.

It might be a variation of this for Red in HGSS. While he does seem to be training in Mt Silver, there are no encounters in the area he's standing in. So he probably trains his mons in the Mt. Silver caves, sees you climbing the mountain and gets in position at the top to face you in battle at the pinnacle of Mt Silver.
