The only new unique environments I can think off is a total desert region (Sahara desert), a complete arctic region(Siberia), a complete mountainous region(Himalayas), or another planet with avatar geography and floating islands

This is the way. The Pokemon world is being overshadowed by the references. Nowadays it's "this real world location but with Pokemon", rather than "this Pokemon world location but with cultural references". Anchitecture, some festivities, even some clothes are fine if they reference some culture, but the base should always be the Pokemon world and, specially, the Pokemon themselves.
