breeding is much, much simpler than vanilla pixelmon - just put the two pokemon you want to breed in the top 2 party slots, and right click the breeder NPC to instantly get them to fuck
repeat until you have a pokemon with the desired egg move
you don't have to be that autistic with IVs because you can easily get bottlecaps from higher level dynamax raids, or buy them from players
probably the only thing you actually have to be autistic about is nature because the high tier nature mints (adamant/modest/jolly/timid) are only obtainable from finding mint clippings or from raids, and people are going to price gouge those high demand ones if they don't just hoard them
even then, if you have a shitty nature on your pokemon you can just slap on one of the neutral (yellow) mints and you'll be fine
