Doesn't look great. The comparison to the screenshot of HGSS in the thumbnail looks better than anything in the whole video.
The Switch games have subpar graphics, but I don't want Pokemon to look like that either.

I genuinely don't understand why people liked Octopath Traveler's aesthetic.
Actual HGSS looked better than anything in that video, and didn't make me feel like I had glaucoma.

Taking sub-par 3-D level geometry and filling it with sprites and a layer of vaseline isn't fixing the problem.
If you want 2-D, then the aesthetic to aspire to would be something closer to the Pokemon Ranger games. Or HGSS's 2-D+3-D mix.
If you want 3-D then something like PL:A without the disgusting pop-in would already have been on the right track, AKA just do Breath of the Wild.
