In essence, anything that isn't poisonous could probably be eaten by humans.
Pokemon canonically eat one another, and people canonically eat pokemon. Farfetch'd and Slowpoke tails come to mind.
I don't know if GF or TPC retconned this last point, but the anime, games, and even TCG all have parallel, but separate canons.
Of course, Gen 7 introduced multiple worlds theory to pokemon lore, meaning that 'canon' doesn't necessarily exist in the same continuity anymore. It was actually pretty clever for the writers, as they conveniently future-proofed any decisions they make (and have made) in subsequent titles.
For example, if people ask why there isn't mega evolution anymore, they can say that, canonically speaking, the story of (whatever game is being criticized for the lack of the feature) takes place in a different world, or timeline. Thus absolving the developers of laziness, by giving them an 'out' of saying it was intentional world building.
tl;dr - pokemon videogame canon/continuity was destroyed with ultra wormholes from Gen 7
and also, humans are omnivorous and can probably eat most pokemon.
