Red mushrooms with stars on them are spicy and will make a Pokemon or your player character male.
Blue mushrooms have multicolored hearts on them and taste really sweet. They'll make you or your Pokemon female.
Black Mushrooms are bitter and disgusting. The withering powers of hatred in them will cause you or your Pokemon to become genderless upon eating one.
