Gold and Silver are skippable, but play virtual console Crystal to get Celebi.
All of generation 3 is skippable because Let’s Go and ORAS exist.
Diamond and Pearl are skippable because of BDSP, but Platinum has new content, so play it.
HGSS are worth a play through, but only if you really like Johto or you need to transfer mons from gen 3 (no daily limit in HGSS).
Black or White can be skipped.
For the sequels, keep the same color unless you want challenge mode which requires playing Black 2 first.
X and Y are both worth a play through. Highly recommend doing it in the winter months for cozy feelings.
ORAS is the better Hoenn overall, so play it. Turn off Experience Share and don’t use the megas for a more traditional play through.
Play either Sun or Moon once for the story.
Play the ultra games for challenge and dex completion.
Let’s Go is the best Kanto experience, so play it.
Sword and Shield are good if you have the DLC.
PLA is a masterpiece as a single player Pokémon game.
BDSP are better Diamond and Pearl.
Scarlet and Violet are both worth playing for the area zero story alone. I’ve done around six play throughs so far and the ending still brings the feels.
