I wish single type Pokémon had a quality that made up for the fact that they only get STAB for one type. Even if the type is solid offensively and defensively by itself, they all usually end up feeling very bland and inflexible to use

Dual types should get 1.4x STAB instead of 1.5x. Not a drastic drop but enough to give single types something.
Hopefully this doesn't lead to any Pokémon becoming effectively weaker when they evolve from a single type into a dual type.

Not really Most of the time Dual types tend to get extra resistance or immunities to make cancel out weaknesses. Only few times were Dual type lose more than they can from being extra types

Only for water types. The non-water monotype defensive mons that see success need to have busted defensive abilities like regenerator, unaware, or magic guard, or they’re some obscenely minmaxed abomination (Blissey).

I think most pokemon gain enough offensive stats when they evolve that wouldn't be an issue. Especially since the evolved form would still have dual STAB and the wider movepool that comes with having an extra type, nd evolving in general.

Could you please give some examples to back your claim? Some of the most uninteresting Pokemon that have also low stats tend to be monotype (i.e. Arbok, Raticate, Sandlash or Muk in gen 1)
