The idea of eevee was that it's DNA being unstable so a number of things can heavily mutate it is best realized with the water evolution.
Besides leafeon it's the only one whose transformation at a cellular level is visible.
Every other evo is "dog that has type color fur" again except leafeon. Who's my 2nd favorite.
Espeon is my least favorite thematically.
So like if an eevee really likes something or someone at night it becomes a dark type. Okay that's weird but sure.
But why psychic for Espeon?
I know sylveons requirements are a bit more fucked especially considering that espeon and sylveon have thematically, the same evolution requirements but it's also the random psychic typing.
