Once I noticed Pikachu has five fingers I found it really creepy for some reason. Just doesn't look right on an animal that's not at all humanoid I guess.

It has fingers they just didn't make them visible because of this weird "too many details not allowed" thing going on with pokemon. They removed hisuian samurott's pecs for the same reason.
