Why do these games have such a different vibe from all the others? They're the only ones that feel like the target demographic was oriented towards older teenagers as opposed to younger kids. What is it about them that gives off this impression?

They have a more mature feel than modern Pokémon games. Also has so much side content.

The main theme of the game was that it took place 2 years in the future and everything in the game reflected that, I think the feeling you're getting is just being able to get invested in the region's continuity and the character arcs presented like Cheren becoming a gym leader or what happened to team plasma after Hilbert/Hilda defeated them, stuff like that is very uncommon in Pokemon games and other games that go for this age demographic in general, explaining the more "mature" feel.
