Other Bankai are inconveniences to the user or have glaring weaknesses that can be exploited by the enemy.
Every Bankai that isn’t connected to the user has the potential to be broken forever if damaged, and only the Soul King’s powers can reverse the damage.
Many Captains are instructed to not even use Bankai anywhere close to allies.
Some of the most fucked up moves in the series such as Unohana’s or Kyoraku’s are Bankai.
Finally, all Bankai users are damned to hell automatically because their reishi is too strong for Soul Society to diffuse it naturally. It’s the price they must pay to maintain the balance of souls. Someone who chose to get stronger above all else is damned.
As for the people who suddenly learned Bankai, they did so under the jurisdiction of a genius (Urahara’s method) or Squad Zero. Others like Ikkaku and Hisagi have gained their Bankai after centuries of training and enlightenment.
