If you want competition, Singles is just a poor option. Regardless of questions on whether its good even as something you play; its 100% awful as something to watch.
The game is uber simple, and very linear. Pokemon has so much luck based bullshit as well, while there will obviously still be an audience; doubles opens up to a shitload of interactions.
Its the "competition" mode for a reason, its decently complex and team gimmicks are more legitimate thing.
This probably is also why its not suddenly been adapted, cause I don't know if you've noticed; but Pokemon tends to be balanced for basically toddlers.
Whether thats super intentional or no; its what Gamefreaks games have been designed as well. Or rather basically not designed beyond the point of wanting to be steamrolled.
There's some hints over the gens that try vaguely to progress some mechanics and then just give up midway through. So expecting them to make a doubles based game; which would probably feel extra awful designed like general pokemon is kinda off.
